Chimney cake(S)
Chimney cake is a traditional pastry from Hungary, but it has been spread in all central Europe.
Bryndzové halušky
Preparation Time : ≈25 minutes
Cooking Time : ≈20 minutes

Ingredients:
For the dumplings (halušky) :
- 2.2 lbs (1kg) starchy potatoes
- 2 cups (250g) all-purpose flour
- 1 teaspoon salt
For the topping :
- 7 oz (200g) bryndza cheese (or a mix of feta cheese and sour cream as a subtitute)
- 4.5 oz (125g) smoked bacon or pancetta
- 1-2 tablespoon sour cream (optional, for a creamier texture)
For decoration or garnish (optional) :
- Fresh chives or parsley
Preparation Steps :
1. Prepare the dough :
- Peel and finely grate raw potatoes
- Add salt and mix in the flour gradually until you get a thick, sticky dough. The texture should be similar to gnocchi dough — not too runny, not too dry.
2. Cook the halušky :
- Bring a large pot of salted water to a boil.
- Using a halušky maker, colander, or spoon, drop small pieces of dough into the boiling water.
- When the dumplings float to the surface, let them cook for another 2–3 minutes, then scoop them out with a slotted spoon.
3. Prepare the topping :
- In a pan, fry the bacon or pancetta until crispy. Set aside.
4. Mix with cheese :
- While the dumplings are still hot, mix them with the bryndza cheese until well coated. If the cheese is too thick, add a spoonful of hot water or sour cream to help it melt.
5. Serve :
- Top with crispy bacon and optionally garnish with fresh herbs.
- Serve warm.
